Yorkshire Parkin

Another favourite in Autumn is of course parkin with a cuppa. There's lots of recipes out there but here's the one we used today.


8oz self raise flour
4oz caster sugar
1tsp ground ginger
1tsp bicarb of soda
1 egg
200ml milk
2oz butter
4oz golden syrup

1) preheat oven gas mark 2

2) sieve flour,sugar,ginger and bicarb into a bowl into a bowl

3) melt the butter and syrup together in a pan

4) beat the egg into the milk

5) gradually pour the butter and syrup into the flour and mix.

6) pour in the egg and milk

7) bake for about an hour or until a knife inserted into the centre of the cake come out clean
